Mom’s Christmas Morning Casserole

We celebrate Christmas in our family, and love the various traditions when it comes to activities, decorations, and, of course, the food. I could go on and on about the various treats and traditions, but one that’s been a part of my Christmas mornings since I can remember is Mom’s Christmas Morning Casserole. We grew up with mom making it for us every year, and now all my siblings have carried on the tradition, planting it firmly in the hearts and tummies of another generation. It’s delicious!

INGREDIENTS

• 10 slices of bread (white or wheat), broken into small-medium sized pieces (1” x 1” +/-)
• 2 cups of grated cheddar cheese (can add more on-top if desired)
• 1 lb of sage ground sausage (or another type of breakfast sausage if preferred)
• 6-8 eggs
• 3 cups of milk
• ¾ tsp of ground dry mustard

DIRECTIONS

1. Fully cook the sausage and drain the grease; set aside to cool
2. Once sausage is cooled, combine the broken-up bread, cheese, and sausage into a 9×13 baking dish
3. Whisk all the eggs with 2 ½ cups of milk and ground dry mustard
4. Pour egg mixture evenly into baking dish
5. Cover baking dish with foil and place in fridge for 12 hours (overnight)
6. When ready to cook, uncover and add ½ cup of milk evenly over the 
7. Sprinkle more cheese on top if desired
8. Bake at 350 degrees for 45 minutes covered; uncover and bake 5 more minutes
9. Let it settle for a few minutes, but serve and enjoy while it’s hot!

There are a variety of variations – it’s not unique to our family – but this is the recipe mom used and has passed on to us. I hope you enjoy it as much as we do – Happy Holidays!!
